Make sure that if you are not doing the books yourself, that the same person who writes the checks are not doing the books.....hate to say it, but these days, the first thing they teach you in Accounting cles is about internal auditing. Someone in the business might be skimming from you. A church secretary here in my town stole over $25k from the church savings. You can never be to trusting with employees.
